Our Team

Hey guys! My name is Sean Wiere, the creator of “The White Pearl” and the Sparrow Cocktail Company. You may find me in the ocean, pickleball courts, or at your local bar. Or you may find me at a local wedding, supporting my wife with her successful wedding planning business.

The idea of the Sparrow Cocktail Company was simply a way I could contribute my bartending and building skills into our events industry repertoire. A dream became a reality when we found a gutted, rusty, spider-infested canned ham trailer ready for action in April of 2024. The project became a full rebuild, while just using the existing metal frame at the bottom. Many thought we were crazy… and still do. but just look at what it has become! The camper has been designed to look drop dead gorgeous, while maintaining the capability of a fully functioning bar. Every inch was planned to a T! Big shout out to Youtube!

Not only do we have many years of customer relationship and hospitality industry experience needed for bartending, but most importantly we know weddings. Your wedding day is something that will be remembered and cherished by you and your wedding guests for a lifetime. Good atmosphere, music, food, and most importantly good drinks is what makes that day special. If all of those attributes are ticked off for the event, you can’t go wrong. Hello, hello! I’m Tiffany Wiere, the co-owner and visionary behind Sparrow Cocktail Co. I’m also lucky to be a wife to Sean and cat mum to Opi! I love yoga, indulging in anything sweet, and binge-watching classics like Grey’s Anatomy.

I was born and raised on a large farm in rural New South Wales, Australia, surrounded by animals and family. My passion for hospitality and events led me to earn a degree in Travel Industry Management from UH Manoa, which paved the way for my career in catering and event planning. After working as a catering manager at several venues along the Central Coast, I launched Wiere Weddings, my own wedding planning company, which I’ve been passionately running for the past three years.

Through my years in the industry, I saw firsthand how the right bar experience could elevate an event. That’s what inspired me to create Sparrow Cocktail Co.—a mobile bar service offering couples and their guests a refined, luxury cocktail experience. I can’t wait to bring a touch of elegance and adventure to your celebration!

We have created a dream team here at Sparrow. Meet Blanca Aguirre. You can call Blanca our “Shohei Ohtani” or “Luca Dončić” of bartending (if you're into sports)! Blanca is like family to us, and luckily the general bar manager at the infamous Mason Bar in Arroyo Grande. She is the mind behind our craft cocktails with almost 12 years of bartending experience. She is also an extra pair of hands if needed on the day. You may be lucky enough to see her at your event helping run the bar!
